A Little History... A Little Philosophy
Over ten years ago oenologist and vineyard-owner Emilio Monechi decided that Florence needed a different kind of wine bar. Sommelier Riccardo Comparini agreed, as did Giancarlo Cantini and Ciro Beligni later on -- and a host of friends on either side of the wine-counter.

Since then, this crew of sommeliers, oenologists and plain old wine-lovers have been selecting some of Italy's finest lesser-known wines -- labels from small producers, carefully chosen for their quality and overall harmony of flavor, and for their value.

Every year the volpi, or "foxes" as they are called, tour the country's wine consortiums and expositions, visiting new and interesting producers and searching constantly for labels that -- from grape to bottle -- are made with an accent on wine, not commerce.

The wines are paired with carefully chosen cheeses and smoked meats or salumi: the cheeses (aged and fresh) from both Italy and France, and the meats from a range of small producers in Tuscany and around.

And we serve it all up in the kind of wine bar where everyone -- expert or novice -- can feel at home.
